ingredients

  • 2 large egs
  • 2 cups all purpose flour
  • 1 1/2 cups milk
  • 1/2 cups vegetable oil
  • 2 teaspoons baking powder
  • 1 tablespoons sweetener of choice
  • 1 teaspoons vanilla paste
  • 1 teaspoons beetroot powder (optional for color)
  • 4 oz white chocolate
  • 1 cup blackberries

Method

  • Step 1

    In a large bowl, whisk the eggs, oil, and milk.

  • Step 2

    Add in the flour, sweetener, beetroot powder, baking powder, vanilla and stir until all combined.

  • Step 3

    Heat a non-stick pan at medium heat.

  • Step 4

    Pour a scoop of the batter in the center. Wait for 45 seconds until you see bubbles and flip it over with a spatula. Wait for 30 seconds and set the pancake aside.

  • Step 5

    In a glass/ ceramic bowl, melt the white chocolate by placing the bowl on a pan of boiling water. Do not let the bowl directly touch the water.

  • Step 6

    Layer pancakes on top of each other on a plate. Pour white chocolate on top. Serve with blackberries.
