ingredients
- 3 1/2 cups all purpose flour
- 2 sticks unsalted, cold butter
- 1 cup cold buttermilk
- 2/3 cup cold whole milk
- 2 teaspoon baking powder
- 1 teaspoo baking soda
- 2 teaspoo salt
- 3 tablepoons milk (for brushing pre-bake)
- 2 tablepoons melted butter (for brushing baked biscuits)
Method
Step 1
Whisk dry ingredients in a mixing bowl.
Step 2
With a box grater, grate really cold butter sticks into the dry mixture.
Step 3
Start gently mixing with the help of a fork. Do not make a homogenous batter, it has to have clumps in it.
Step 4
Add the liquids and continue stirring with the fork. Do not knead a dough. It should be a clumpy dough with visible chunks of butter in it.
Step 5
Shape a disk with the dough and cover with plastic wrap. Refrigerate for 30 minutes.
Step 6
Generously sprinkle some flour to the kitchen surface. Using your hands, fold the dough and gently press. Do this folding 7 times. This will create layers in the biscuits.
Step 7
Sprinkle the surface and the dough generously with flour and roll a 2" thick dough.
Step 8
Preheat the oven to 435 F, fan mode on. Using a cutter or a small glass, cut out circle shaped biscuits.
Step 9
Place the biscuits on a parshment paper laid baking tray. Brush them with some milk.
Step 10
Bake at 435 F fan oven for 13 minutes. Brush them with melted butter immediately after they are out of the oven and still hot. Enjoy!
