ingredients
- 3 ripe bananas
- 1 large egg
- 1 cups whole wheat flour
- 1/2 cups rolled oats
- 1/3 cups honey
- 1/3 cups olive oil
- 1 teaspoons baking powder
- 1 teaspoons vanilla
- 1 teaspoons ground cinnamon
- 1 teaspoons salt
- 1 cups fresh or frozen blueberries
Method
Step 1
Preheat the oven to 375 F.
Step 2
In a mixing bowl, mash the bananas with a fork.
Step 3
Add in the egg, vanilla, honey, oil and mix with a fork.
Step 4
Add the dry ingredients and stir gently. Do not overmix. Lastly, fold in the blueberries.
Step 5
Pour into 10 muffin cups and sprinkle with granulated sugar on top (skip this step for a refined sugar-free recipe).
Step 6
Bake in the preheated oven at 375 F for 18-20 mins. Do a toothpick test, it has to come out clean.
