Greek Salad With Lamb Meatballs
Gorgeous lunchtime or anytime salad prepared by the beautiful and talented @the_simple_taste who included our 100% grass fed lamb in her meatballs.
Greek Freak Lamb Meatballs1 pound ground lamb (@5280meat)2 1/2 tablespoons Greek freak seasoning (@spiceologist)1 scallion, thinly slicedPreheat oven to 400 degrees F. Place all ingredients in a medium bowl and combine well using your hands (the best tools you have, *tip: use disposable gloves). Do not over mix or mush up, you will end up with a dense meatball. Roll meatballs into the size of a golfball. Place on a prepared baking sheet, lined with parchment paper or foil and an oven safe wire rack on top. Grease wire rack well with non stick cooking spray. Transfer to the oven and bake for approximately 14-16 minutes or until cooked through. Yields 12 meatballs Lemony Greek Freak Vinaigrette1/4 cup white wine vinegar3/4 cup lemon infused extra virgin olive oil1 tablespoon Greek freak seasoning (@spiceologist)1/4 teaspoon black pepper1/4 teaspoon saltPlace the vinegar in a small bowl. Pour in the lemon olive oil in a steady stream while whisking steadily to emulsify. Add seasoning, salt and pepper. Adjust to your liking.
