- 2 pounds cut into 1-inch pieces boneless chicken thighs
- 2 large eggs
- 1/4 cup mochiko flour
- 1/4 cup cornstarch
- 1/4 cup granulated sugar
- 1/4 cup soy sauce
- 1 tablespoon sesame seeds
- 1 teaspoon chopped green onion
- 1 teaspoon ground ginger
- 1/2 teaspoon kosher salt
- 2 (14 ounce) jars EPIC Beef Tallow
Method
Step 1
In a large bowl, combine the eggs, mochiko flour, cornstarch, sugar, soy sauce, sesame seeds, green onions, ginger powder, and salt. Mix well until thoroughly combined.
Step 2
Add the chicken pieces to the marinade and toss until evenly coated. Cover and refrigerate overnight to allow the flavors to develop.
Step 3
In a deep skillet or fryer, heat EPIC Beef Tallow to 350°F. Ensure there is enough tallow to fully submerge the chicken pieces.
Step 4
Working in batches, carefully fry the marinated chicken pieces for about 3-4 minutes, or until they are golden brown and have reached an internal temperature of 165°F.
