ingredients

1st Layer

  • 60 grams raw cashew
  • 30 grams hazelnuts
  • 30 grams shredded coconut
  • 2 tablespoons sunflower seeds
  • 2 tablespoons pumpkin seeds
  • 1 tablespoons raw cacao powder
  • 1 tablespoon raw cacao nib
  • 2 tablespoons maple syrup
  • 2 tablespoons melted coconut oil

2nd Layer

  • 1 cup coconut cream
  • 1/2 cup fine coconut
  • 1/3 cup melted coconut oil
  • 7 tablespoons raw cacao powder
  • 7 tablespoons maple syrup
  • 1/4 teaspoon salt

3rd Layer

  • 60 grams almonds
  • 30 grams hazelnuts
  • 1/2 cup shredded coconut
  • 2 tablespoons sunflower seeds
  • 2 tablespoons pumpkin seeds
  • 1 tablespoons raw cacao powder
  • 3 tablespoons melted coconut oil
  • 2 tablespoons rice malt

Method

  • Step 1

    In a food processor place every ingredient for the 1st layer and process until well processed but still slightly crumbly. Press the crust into the bottom of the mold (add in the seeds at the end if you want to keep their texture and shape).

  • Step 2

    In a high speed blender place every ingredient for the 2nd layer and blend well until smooth. Add more sweetener or salt if you need. Layer the filling above the base. Cool it in the freezer for 15-20 minutes.

  • Step 3

    While the surface of the second layer is still wet, place every ingredient for the 3rd layer and process until well processed but still quite crumbly. Layer the mixture over the 2nd layer (add in the seeds and long shredded coconut in the end if you want to keep their texture and shape).

  • Step 4

    Freeze until set. ⁣Take out from the mold and cut with a warm knife.
