Scrambled Paneer Frankies with Parathas

ingredients
- 1 tablespoon rapeseed oil, or ghee
- 1 teaspoon cumin seeds
- 1/4 teaspoon asafoetida, (hing) - optional but great for the gut
- 1 cup finely chopped white onion
- 1 teaspoon chopped ginger
- 1 teaspoon chopped garlic
- 1/2 cups chopped tomatoes
- 2 teaspoons chopped green chillies
- 1 teaspoon coriander
- 1 teaspoon cumin powder
- 1/2 teaspoon tumeric powder
- 1 teaspoon red chilli powder
- 1/2 teaspoon garam masala
- 2 tablespoons lemon juice
- 2 cups paneer
- Salt to taste
- 1/4 cup chopped coriander, (cilantro leaves)
Method
Step 1
Heat the oil or ghee in a pan and add cumin seeds and asafoetida
Step 2
When they start to crackle, shortly after add onions, ginger and garlic and fry to brown (all 3 can be chopped in a chopper together)
Step 3
Chop up your tomatoes, peppers and crumble your paneer
Step 4
The onions will have browned by now so add your tomatoes and green chilli
Step 5
Mix and add all your spices cook for 1 - 2 minutes
Step 6
Add your paneer and lemon juice
Step 7
Cook for 2-3 minutes then garnish with coriander and serve in parathas to make your frankie rolls
