ingredients

  • 1 tablespoon rapeseed oil, or ghee
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida, (hing) - optional but great for the gut
  • 1 cup finely chopped white onion
  • 1 teaspoon chopped ginger
  • 1 teaspoon chopped garlic
  • 1/2 cups chopped tomatoes
  • 2 teaspoons chopped green chillies
  • 1 teaspoon coriander
  • 1 teaspoon cumin powder
  • 1/2 teaspoon tumeric powder
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon garam masala
  • 2 tablespoons lemon juice
  • 2 cups paneer
  • Salt to taste
  • 1/4 cup chopped coriander, (cilantro leaves)

Method

  • Step 1

    Heat the oil or ghee in a pan and add cumin seeds and asafoetida

  • Step 2

    When they start to crackle, shortly after add onions, ginger and garlic and fry to brown (all 3 can be chopped in a chopper together)

  • Step 3

    Chop up your tomatoes, peppers and crumble your paneer

  • Step 4

    The onions will have browned by now so add your tomatoes and green chilli

  • Step 5

    Mix and add all your spices cook for 1 - 2 minutes

  • Step 6

    Add your paneer and lemon juice

  • Step 7

    Cook for 2-3 minutes then garnish with coriander and serve in parathas to make your frankie rolls
